Our Simple Bison Roast

This simple roast is a family favourite. With simple ingredients and a slow cooker, you too can recreate this delicious recipe. Perfect for prepping in the morning for suppers or family meal time.



Ingredients


1 bison roast

1 medium yellow onion, diced*

1/2 pound carrots, peeled and chopped into 2" chunks

4 cups stew potatoes, halved

3 cloves garlic, minced*

2 cups beef stock

2 Tbsp dried thyme

1 Tbsp dried parsley

1 teaspoon pepper, to taste

1 teaspoon salt, to taste



Instructions

  • Season the thawed roast with salt and pepper. Place roast in the slow cooker and spread the onions, carrots, potatoes, and garlic around the roast. Pour in the broth and add in the dried thyme and parsley.

  • Secure the lid on your slow cooker and cook on low for 6 to 8 hours, until bison is very tender. Transfer roast to a cutting board and allow it to rest.

  • Cut the bison roast into chunks for serving and enjoy!

*Optional: take the juices from the crockpot, once all the roast and vegetables are removed, and pour into the saucepan. On medium-high heat, bring the juices to a gentle boil and slowly whisk in flow flour (approximately 1-3 tablespoons) until your desired consistency of gravy is met. Taste test and add salt if desired.
